Maillard Toast and Espresso Bar, North Fitzroy

The offer at Maillard Toast and Espresso Bar is as compact as the tiny space, and the name says it in two words – espresso and toast.

There’s Vegemite (of course) and peanut butter (house-made) for traditionalists, but beyond that the one page menu features very little that you would find on the average suburban breakfast table.

Toasted slices of Ed’s Bread arrive with a slather of creamy mascarpone and another slather of dulce de leche with a sprinkle of pink Himalayan salt, or with Belgian butter, freshly ground cinnamon and a sprinkle of panela sugar (a homage to the cinnamon toast at Trouble Coffee and Coconut Club, the original San Francisco toast cafe).

Toast and espresso all day
A spread of tahini, honey and pistachio sounds like an approved healthy food choice, and the orange and red onion marmalade with triple cream cheese is grownup savoury-sweet.

Co-owner Zoran Pajic says the pizza at Carlton’s DOC inspired a slice of potato sourdough topped with San Daniele prosciutto, San Marzano tomatoes and buffalo mozzarella, and his partner, Lauren Komel, draws on her Italian background for a mix of gianduia, crushed hazelnuts and mascarpone that’s a superior riff on Nutella.

Her nonna’s influence extends to donuts from Cobb Lane, which she calls krapfen (that’s north Italian for “donut”) and tops with her own crema pasticcera and gianduia.

Coffee is the Allpress Supremo blend – a dark, toasty and reliable drop.
