Industry Beans’ award-winning fit-out, smart food and bold house-roasted espresso and filter coffee have made it a Fitzroy cafe destination.

Industry Beans seems to be buzzing with brunchers and specialty coffee-hunters whatever day of the week you visit.

The back-street Fitzroy coffeehouse breaks with Melbourne tradition – the building is new, not an old factory or warehouse; the fitout of the tilt-slab shell won the UK and International Cafe Award at the 2013–2014 British Restaurant & Bar Design Awards.

The tall, narrow space echoes the intimacy of a Melbourne laneway, says architect Matt Rawlins from Melbourne’s Figureground Architecture. The site houses the Industry Beans roastery and green bean storage, as well as a busy kitchen serving a creative cafe menu. Owners Trevor and Steve Simmons watch over the whole show from mezzanine offices and a cupping room above.

Coffee comes as two blends and a couple of single origins for espresso, plus three or four regularly changing single origins matched to different filter brewing methods: Aeropress, pourover, cold drip and the slightly esoteric gold mesh.

A Honduras Los Laureles, made in an Aeropress, is a washed bourbon with sparkling acidity, muted sweet citrus flavours and a bitter grapefruit tang.

Industry’s Fitzroy Street blend is the go-to for milk coffee, a seasonal mix that might include a Colombia Cauca, a San Emilio Estate from El Salvador and an Indonesian Wahana Estate.

There’s a bit of an Indonesian theme in the coffee here: the single origin espressos could include coffee from Jampit Estate in East Java, one of five government-owned estates that grow most of Java’s arabica. Coffee menu notes: full body, low acidity and approachable. In a short black it has a nutty, toasty aroma, a lush body and sweet funky flavours. It makes a classic espresso brew.

Food from the busy kitchen pushes the cafe envelope, from breakfasts of passionfruit panna cotta with chia seed granola or an avocado smash with chevre, seared lemon and green tea salt, to lunch dishes of truffle foam, porcini powder, polenta chips and a poached egg, and a coffee-infused wagyu burger with chilli jam on a brioche bun.
